Rhubarb & Apple Muffins
Stewed apple with a swirl of cooked rhubarb with Billies Sugared Spice. Makes a great breakfast treat or desert. Serve with custard.
- 2 cup Self Raising flour
- 100 g Melted Butter
- 2 Heaped tsp Billies Sugared Spice
- 1 cup Milk or Yogurt or 1/2 and 1/2
- 1 egg
- 1 cup Stewed Apples
- 1/2 cup Stewed Rhubarb
Mix sugar, flour and Billies Sugared Spice,
then mix in stewed apple.
Combine egg, butter and milk, then add to dry ingredients.
Fold carefully and swirl through stewed rhubarb.
Scoop in to greased muffin tins
Bake @ 180ºC for about 12-15mins.
Dust with Icing Sugar and serve with fresh cream.
